Why a European Bake Shop? What inspired the Idea?
From Paris Side Streets to Scottsdale: Why I Opened Gold Standard Bake Shop
Posted by [Mercedes]
For as long as I can remember, food has been a central part of my life — not just for nourishment, but for discovery, connection, and joy. And yet, for years, I struggled to find baked goods that made me feel as good as they tasted. That’s where this story begins.
A Childhood Full of Flavor
I was born and raised in Scottsdale, Arizona, but thanks to my adventurous, travel-loving family, I was introduced to global cultures and cuisines at an early age. Our family vacations weren’t your typical tourist trips — we explored markets, sampled street food, and met local artisans. Those experiences gave me an appreciation for food that was both handmade and heartfelt.
By age ten, I was already experimenting in the kitchen — baking for friends, cooking for family, and constantly dreaming up new recipes. Looking back, it’s clear that the seeds of Gold Standard Bake Shop were planted early.
Falling in Love with European Baking
Later, I had the chance to study abroad in Europe, where my love for baking truly came to life. I spent time in some of the most food-rich places in the world — London, Paris, Switzerland, Spain, and Italy. But it was Paris, with its charming side streets and pastry shops on every corner, that stole my heart.
Some of my favorite memories are of walking through quiet Parisian neighborhoods, tasting freshly baked croissants, rustic sourdough, and handmade tarts that seemed almost too beautiful to eat. I was lucky enough to meet local chefs and bakers who generously shared their techniques and traditions with me. Their knowledge, care, and craftsmanship left a lasting impression.
The Struggle Back Home
But when I returned to the U.S., something felt... off.
I couldn’t find baked goods that tasted — or felt — the same. The breads and pastries I bought at home often left me feeling heavy, bloated, or dealing with digestive discomfort. It was frustrating and confusing, especially after feeling so nourished by the food I had enjoyed overseas.
This led me on a deep journey into ingredients, sourcing, and food systems. That’s when I discovered the power of ancient grains like einkorn, spelt, and emmer — the very grains that had quietly fueled so many of the European recipes I loved.
The Birth of Gold Standard Bake Shop
Gold Standard Bake Shop was born out of a desire to recreate that experience — to bake with intention, integrity, and ingredients that support both wellness and flavor.
Our philosophy is simple:
-
We bake with ancient grains for their digestibility, flavor, and nutritional value.
-
We source locally and organically, building relationships with farmers and producers who share our commitment to sustainability.
-
We focus on quality over shortcuts, making everything from scratch and with purpose.
This bake shop is more than a business — it’s a dream that’s finally come to life. A dream to bring you with me on this culinary adventure. A dream to share the kind of food that’s deeply satisfying, naturally nourishing, and joyfully indulgent.
Let’s Bake a Better Future
Whether you're stopping by for your morning bread, an afternoon pastry, or just a warm smile, I hope Gold Standard Bake Shop becomes a place where you feel seen, welcomed, and inspired to love food in a whole new way.
Thank you for being a part of this journey — I can’t wait to share what’s baking next.
With gratitude,
Mercedes
