Ingredients:
3 cups Einkorn flour
2 tsp active dry yeast
1 cup warm water (about 110°F / 43°C)
2 tbsp raw honey
1 tsp sea salt
2 tbsp olive oil (plus extra for greasing)
1 cup toasted walnuts, roughly chopped
Instructions:
Activate the Yeast: In a small bowl, combine the warm water, honey, and yeast. Stir gently and let it sit for 5-7 minutes, until it becomes foamy and bubbly.
Mix the Dough: In a large mixing bowl, whisk together the Einkorn flour and salt. Make a well in the center and pour in the yeast mixture and olive oil. Stir with a wooden spoon or your hands until the dough starts to come together.
Knead Gently: Turn the dough onto a lightly floured surface and knead gently for about 8-10 minutes. Einkorn dough is softer and more delicate than modern wheat dough, so avoid over-kneading. Fold in the toasted walnuts during the last few minutes of kneading.
First Rise: Place the dough in a lightly oiled bowl, cover with a damp cloth or plastic wrap, and let it rise in a warm, draft-free spot for 1 to 1.5 hours, or until doubled in size.
